This week, I decided to try a bite-size version of the frozen banana pops I often make in the summer. I made the little snacks on a hot and sticky afternoon and they were the most delicious, icy treats! As you probably know, when bananas are frozen, they take on a consistency almost like ice cream and are such an easy, healthy alternative to frozen dairy desserts. I made two versions:
#1 bananas slices topped with peanut butter, peanuts, and dark chocolate
#2 bananas slices covered in dark chocolate sprinkled with peanuts
Ingredients:
Ripe (not too ripe!) Bananas
Salted Roasted Peanuts
Peanut Butter
Dark Chocolate (vegan)
To begin, line a baking sheet or cutting board with wax paper. Tip- tape your wax paper to the edges of your sheet or board to avoid slipping. Slice your bananas into 1 inch rounds, chop peanuts, and heat your chocolate in a double boiler.
For version #1, top banana slices with a dollop of peanut butter then cover with chopped peanuts, pressing down a bit to make sure everything is stuck in place! To finish, cover with a bit of melted chocolate.
For version #2, use two forks to gently dip and flip your banana slices one at a time in your melted chocolate. Place on your wax-lined sheet and sprinkle with chopped peanuts before the chocolate dries!
To set the chocolate, place your cutting board or baking sheet into the freezer for about an hour then gently package in an airtight container.
